Simple Buttercream Heart Shaped Cookies

Valentine’s Day is such a sweet holiday to have in the middle of winter. By this time in February the grey chilly days seem never ending. Celebrating love (whether romantic or platonic) can never be wrong. Assorted chocolates, homemade cards and a special meal are typical ways we make merry on Cupid’s day.

I bake a lot and usually from scratch- on occasion I rely on boxed mixes to make easy desserts. I found adorable Pillsbury mini heart cookies at my local Giant Food store and decided they would be a fun indoor activity for my kids. The cookies were already cut out so they only required a quick placement on a cookie sheet and some time baking in the oven.

To add a little extra pizzaz we made a buttercream frosting to slather on top and used an assortment of Valentine’s Day sprinkles too. You could also make heart sandwich cookies and roll the edges in sprinkles- the choice is yours.

Simple Buttercream Icing: (From Pillsbury)

Ingredients:

1/3 cup butter; softened

2 cups powdered sugar

1/2 tsp vanilla extract

1-2 Tbsp milk

Directions:

1. In a bowl, beat butter until light and fluffy.

2. Add powdered sugar one cup at a time until combined.

3. Add vanilla and milk and mix until you get a desired spreading consistency.

Feel free to dye the icing pink or red for a festive flair. These little cookies are a fun classroom treat or whip them up to pass out to neighbors. It’s always nice to be thought of.

Wishing you a wonderful Valentine’s where you feel loved and cared for. (Remember love starts with self-love.)
