Sourdough "Everything Bagel" Crackers

Several years ago I discovered Everything Bagel seasoning at Trader Joe’s and immediately became hooked. Adding it to cracker dough gives a big boost of flavor and texture from the poppy and sesame seeds. Crackers are a quick snack and delightful addition to a charcuterie board, and your friends will be impressed to know you made them from scratch.

If you’ve been following along the last month or so, you've watched my sourdough journey. I’ve been working to reduce waste and these crackers use up sourdough discard. I like to eat these crackers with hummus or spread a smear of cream cheese on top with a dollop of pepper jelly. (Trust me! Sooo good!!)

Sourdough Crackers- (Slightly adapted from King Arthur Flour)

Ingredients:

  • 1 cup all-purpose flour

  • 1/4 teaspoon salt

  • 1 cup sourdough discard

  • 4 tablespoons unsalted butter, room temperature

  • 1 tablespoons Everything Bagel seasoning

  • 1 tablespoon Olive oil, for brushing

  • coarse sea salt for sprinkling on top

Directions:

  1. Mix the flour, salt, sourdough starter, softened butter, and Everything Bagel seasoning together into a smooth dough.

  2. Divide the dough in half, and shape each half into a rectangular slab. Cover with plastic wrap, and refrigerate for 30 minutes, or up to a couple days, until the dough is firm.

  3. Preheat the oven to 350°F.

  4. Flour a piece of parchment paper lightly, along with a rolling pin, and the top of the dough.

  5. Working with one dough at a time, roll it out into a very thin layer on the parchment. The dough will have ragged edges.

  6. Transfer the dough and parchment paper onto a baking sheet. Brush with oil and then lightly sprinkle the salt over the top.

  7. Cut the dough into 1 1/4" squares; I use a pizza cutter. (This keeps the squares even and consistent.)

  8. Prick each cracker square with the tines of a fork.

  9. Bake the crackers for 20-22 minutes or until they start to brown around the edges.

  10. When fully cooked, remove the crackers from the oven, and allow them to cool on a rack. Store in an airtight container.

Food brings us together; it connects people and allows us to join at the table while sharing a meal along with thoughts & experiences. It’s the ultimate show of love.

I recently went to the beach after 12 weeks of quarantine and got to spend time with my parents and sisters family for outdoor relaxing and fun. We rented a home and made sure to social distance. It was a reset that we all desperately needed. The last few months have proven to be stressful regarding the pandemic, virtual schooling and the current social injustices. So many big things are happening and of course have me thinking about what’s truly important. Kindness matters. We mirror the change we wish to see. Humans are a reflection of experiences good, bad and ugly. Right now looking inward we must find basic human decency. The world has plenty of critics and while this blog may focus on food, I think it’s crucial to say something. Even if you don’t agree with someone’s choices or behaviors you can still show empathy. To rebuild this broken system we must be understanding, cooperative and compassionate. For too many years voices were ignored and a horrendous cycle perpetuated. The disenfranchised are fed up (rightfully so!) and we all must work together to listen and act/speak out against injustices. Radical actions bring real lasting change. #blacklivesmatter
