Self-Rising Chocolate Chip Cookies
By now your pantry may be running low on basic goods like all purpose flour. I ran out weeks ago, but happened to have a bag of self-rising hanging around. Typically, biscuits and pancakes rely on this type of flour which already includes the leavening agents salt and baking powder. It’s a staple ingredient in many Southern recipes.
I had a hankering for chocolate chip cookies a few weeks ago and came across this recipe from King Arthur Flour. These cookies have crisp edges and soft middles; a delicious combination in my opinion.
Self-Rising Chocolate Chip Cookies: (Recipe slightly adapted from KAF)
Ingredients:
1 cup brown sugar, packed
1/2 cup unsalted butter, room temp
1/2 cup Crisco (vegetable shortening)
2 tsp vanilla extract
1 large egg
2 3/4 cup self-rising flour
2 cups chocolate chips
Directions:
Preheat the oven to 375 degrees Fahrenheit and line cookie sheets with parchment or Silpat.
In a large bowl (I use my stand mixer), combine the brown sugar, butter, Crisco and vanilla, beat until well combined.
Add the egg and beat, scrape the bottom and sides of the bowl to make sure all ingredients are combined.
Use a cookie scoop to scoop balls of dough and put onto prepared baking sheets. Leave a couple inches between the dough since it spreads.
Bake the cookies for 10-12 minutes until edges are lightly browned and tops are golden.
Remove tray from oven, and cool on pan a few minutes until cookies set. Transfer to a cooling rack so they can finish cooling off.
Repeat with remaining dough. (i only bake one tray at a time to allow for even baking.) Store at room temperature for three days or freeze to eat later.
