Peach Lemonade Popsicles
This summer we’ve had more 90+ degree days than I can remember. To beat the heat we made a cool and refreshing treat using peaches we picked. The best part of eating with the seasons is you get super fresh foods, full of amazing flavor. Popsicles are a fun kitchen activity for kids, we have reached the stage of quarantine where my daughter complains of boredom. She enjoys helping with kitchen tasks and children are never too young to lend a hand.
If you don’t own popsicle molds, don’t fret! Dixie cups (the little paper bathroom sized cups) work well for this project along with wooden popsicle sticks. Use what you have and make it work. You also need to pull out the blender to make these frozen goodies.
Peach Lemonade Popsicles-
Ingredients:
2 ripe peaches, chopped into chunks
1 cup lemonade (freshly made or store bought)
2 Tbsp honey
(For a low sugar version, add one cup water instead of lemonade. Then add a splash of lemonade; 3 tbsp
Keep in mind this popsicle will be icier.)
Directions:
Place all ingredients into your blender and pulse until smooth.
Pour mixture into popsicle molds and insert sticks. Freeze for a minimum of four hours or overnight.
To remove popsicles run mold under warm water for a few seconds to assist in loosening pops.
The options for popsicles are limitless; choose your favorite fruit and or juice and get creative. I’m already brainstorming popsicles with yogurt for a creamy dessert option. Let the farmers market or pick your own fields inspire you. Have you made any frozen desserts this summer?
